Three Cheese Macaroni

Ingredients
- 12 ounces macaroni
- salt and pepper
- 1 1⁄2 ounces butter, plus extra for greasing
- 1 1⁄2 ounces all-purpose flour
- 3 3⁄4 cups milk
- 2 teaspoons Dijon mustard
- 6 ounces smoked cheddar cheese, grated
- 2 ounces mozzarella cheese, grated
- 3 ounces sharp cheddar cheese, grated
- 2 ounces fresh breadcrumbs
Directions
- Cook the macaroni according to pack instructions. Drain and set aside.
- Melt the butter in a large saucepan. Add the flour and cook, stirring for 1 minute Remove the pan from the heat and gradually blend in the milk.
- Bring to a boil, stirring constantly until the mixture thickens. Simmer for 5 mins, stirring.
- Stir in the mustard, smoked cheddar, mozzarella, 2 oz of the sharp cheddar and the macaroni. Season with salt and pepper.
- Lightly butter a large shallow ovenproof dish and spoon in the macaroni mixture. Sprinkle with the breadcrumbs and the remaining cheddar and bake in a preheated oven at 400F for 15-20 mins until golden and bubbling.
