Threadgill’s Creole Cabbage

Ingredients
- 6 slices bacon, diced
- 2 cups yellow onions, diced
- 4 cups tomatoes, diced
- 1 head green cabbage, cut into 1 1/4-inch squares
- 4 cups tomato sauce
- 1 cup water
- 1⁄2 teaspoon Tabasco sauce
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon black pepper
Directions
- SAUTE DICED BACON, add onion, and continue cooking. Add all other ingredients and bring to a boil, stirring to avoid scorching. Turn down to a simmer and stew until cabbage is done, about 1 hour. Makes 10 big servings.
