Thin Chocolate Cookies

In my long time search for a cookie I once had at a social gathering, I came across this and it is fairly close to the one I have been searching for all these years. I found it on the Rodelle website where they sell some of the ingredients called for. I just used what I had on hand and the cookies were wonderful. Show more

Directions

  1. 1 In small bowl, whisk together flour, salt and baking soda and set aside.
  2. 2 In another bowl, combine sugar and butter, mixing on low speed 1 - 2 minutes.
  3. 3 Add in eggs and scraped vanilla beans, mix well.
  4. 4 Add flour mixture in small amounts mixing thoroughly after each addition.
  5. 5 Add the walnuts and the cocoa and continue to mix until all the ingredients are incorporated.
  6. 6 Place the dough in the fridge for 30 minutes.
  7. 7 Preheat oven 325 degrees Fahrenheit.
  8. 8 Line a baking sheet with parchment paper or a silicone mat.
  9. 9 Divide the dough into 1 tbsp portions rolled into balls
  10. 10 Transfer to the lined baking sheets spacing about 3” apart.
  11. 11 Flatten with the bottom of a glass dusted with powdered sugar to 1/3 “ thickness.
  12. 12 Bake for about 12 minutes rotating half way through.
