  1. Beat the egg yolks with sugar until you get something like an eggnog then add the mascarpone cheese and mix well the mixture.
  2. Whisk the egg whites until stiff with a pinch of salt.Gently add to the mix and work with care.
  3. Make coffee and add 2 tablespoon of sugar.
  4. Prepare a roasting pan or tray.
  5. Dip the savoiardi in the coffee and form a layer then spread on a generous coat of cream.
  6. Sprinkle entire surface with cocoa.
  7. Continue like this for three layers or more if you prefer.
  8. Place the Tiramisù in the fridge for a few hours before serving.
