'the Freshest' Blue Cheese Salad

Ingredients
- 1 orange bell pepper
- 150 g snap peas
- 100 g avocados
- 1 cucumber
- 1 Granny Smith apples
- 1⁄2 lemon
- 1⁄2 lime
- 100 g lettuce
- 50 g blue cheese
- 10 g pine nuts
- 2 tablespoons honey dijon mustard
- 40 ml fig vinegar
Directions
- Prepare your fresh ingredients by, gutting and slicing the bell pepper, thinly slice avocado, slice cucumber, slice granny smith apple, peel and dice lemon and lime, finely chop lettuce and mix it all well.
- Add snap peas and add pine nuts. Mix once again.
- Make the dressing by mixing the dijon mustard and balsamic vinegar well.
- Drizzle the dressing, crumble the blue cheese into very small pieces over the salad and mix well a final time.
