The Dove's Nest Cantaloupe Soup

Ingredients
- 2 medium ripe cantaloupes, peeled, seeded and cut into chunks
- 1⁄2 cup sugar
- 1⁄3 cup fresh orange juice
- 1 tablespoon fresh lime juice
- 1 tablespoon fresh lemon juice
- 1 (8 ounce) can coconut milk
- 1⁄4 teaspoon vanilla extract
- 1⁄8 teaspoon ground ginger
- 3⁄4 cup half-and-half
- rum (to taste)
Directions
- Place cantaloupe chunks in a large bowl. Add the sugar, orange juice, lime and lemon juices, coconut milk, vanilla, ginger, half and half and rum; mix well.
- Pour part of the mixture into a blender container. Process for 2 to 3 minutes or until smooth. Repeat with the remaining mixture.
- Pour into a large nonreactive bowl. Chill, covered for several hours.
- Ladle into tea cups or soup bowls.
