Ingredients
- 5 large sweet potatoes, cooked
- 2 1⁄2 cups butter, melted
- 1 cup granulated sugar
- 2 eggs, beaten
- 1 teaspoon vanilla
- 1 cup shredded coconut
- 1 cup brown sugar
- 1 cup pecans, chopped
- 2 tablespoons flour
Directions
- Lightly rub 9x13" cake pan or casserole dish with butter. In large mixing bowl, mash cooked sweet potatoes. Add 1.5 cups melted butter, granulated sugar, eggs, and vanilla- beat until smooth. Pour into prepared casserole dish. In medium bowl, mix coconut, brown sugar, remaining melted butter, pecans and flour. Spread topping over potato mixture and bake uncovered 20-30 minutes at 350 degrees or until topping is brown.
