Ingredients
- 1 cup rice flour
- 1⁄2 cup tapioca flour
- 1⁄2 cup potato starch
- 2 cups blueberries
- 1 cup sugar
- 3⁄4 cup rice milk
- 1⁄2 cup canola oil
- 2 teaspoons baking powder
- 1 teaspoon xanthan gum
- 1 teaspoon salt
Directions
- Preheat oven to 350.
- Mash 1/2 C blueberries and set aside.
- Mix all the ingredients, except for the blueberries, in a large bowl.
- Stir in mashed berries.
- Fold in whole berries.
- Grease a cupcake pan and bake for 12 minutes.
