The Almost Anzac Biscuit

Ingredients
- 12 tablespoons butter, unsalted
- 3⁄4 cup all-purpose flour
- 1⁄4 cup flax seed
- 1 cup sugar
- 1 cup coconut, unsweetened, shredded, toasted
- 1 cup rolled oats
- 1 tablespoon honey
- 1 teaspoon baking soda
- 1⁄4 teaspoon salt
Directions
- Heat oven to 350°F Line cookie sheet with parchment paper.
- In a small sauce pan, melt butter over medium heat. Add honey and baking soda to the butter and stir well. Remove from heat and set aside.
- Mix the flour, flax seed, oats, sugar, coconut and salt in a bowl.
- Add the melted butter to the dry ingredients and stir to combine.
- Roll dough into 12 balls and flatten with bottom of glass. Place on cookie sheet 2" apart.
- Bake for 10-12 minutes or until golden brown. Remove from oven and cool on sheet for 5 minutes.
- Remove to wire rack to cool completely.
