Thai Vegetable Soup

Ingredients
- 1 cup chicken broth
- 2 teaspoons lime juice
- 2 slices ginger, fresh & peeled
- 2 tablespoons chopped tomatoes
- 2 teaspoons soy sauce
- 1 small garlic clove, peeled
- 1 cup spinach leaves, coarsely chopped
- 1⁄4 cup finely shredded carrot
- 1 teaspoon chopped fresh cilantro
Directions
- Combine broth, lime juice, ginger, tomato, soy sauce and garlic in small saucepan. Cook over medium to low heat for 10 minutes.
- Stir in spinach, carrot and cilantro and return to a simmer and cook just until spinach is wilted. Remove ginger and garlic. Serve immediately.
