Thai-Style Salmon Parcels

Ingredients
- 2 ounces butter
- 4 salmon fillets
- 6 scallions, sliced
- 1 green chili pepper, de-seeded and finely sliced
- 1 lime, Zest and juice
- 1 -2 tablespoon cilantro, freshly chopped
- 8 fresh lime leaves (fresh or dried)
- 2 sticks lemongrass, each halved lengthways
Directions
- Generously butter four pieces of thick foil. Place a piece of fish on top of each piece of foil and then divide the scallions, chili, lime juice, cilantro and lime leaves equally between each one. Dot any remaining butter on top and place a piece of lemon grass stick on top.
- Fold up the foil securely to form a parcel, making sure the seams are at the side. Cook on the grill for 12-15 mins until the fish is cooked through. Serve immediately.
