Thai Shrimp Salad

Ingredients
- 1 lime, zest and juice
- 1 stalk lemongrass, roughly chopped
- 1 red chili pepper, deseeded and chopped
- 2 scallions, sliced
- 1 tablespoon cilantro, chopped
- 1 tablespoon fish sauce (nam pla)
- mixed salad green, for 4 people
- 8 ounces jumbo shrimp, cooked and peeled
Directions
- Place the lemongrass in a bowl with the lime zest and juice, chili pepper, scallions, cilantro, fish sauce and 4 tbs cold water.Arrange the salad leaves in a bowl. Place the shrimp on top and drizzle with the dressing.Serve immediately.
