Thai Peanut Chicken Salad

Ingredients
Salad
- 1 lb boneless chicken breast
- 2 teaspoons canola oil
- 1 romaine lettuce hearts
- 4 green onions, sliced
- 1⁄2 cup chopped peanuts
Sauce
- 3 tablespoons peanut butter
- 1 tablespoon soy sauce
- 1 tablespoon cider vinegar
- 1⁄4 cup water
- 1 teaspoon sugar
- 1⁄4 teaspoon cayenne pepper
Directions
- In skillet, brown chicken on both sides until juices run clear.
- Cut into short strips.
- Divide lettuce among individual plates.
- Sprinkle with onions and peanuts; arrange chicken on top.
- For sauce, combine all ingredients well.
- Drizzle over salad.
