Thai Green Curry for the Crockpot

Ingredients
- 1 cup unsweetened coconut milk
- 2 tablespoons green curry paste
- 1 lemongrass, stalk cut into 1 inch pieces
- 1 cup chicken broth
- 2 tablespoons fish sauce
- 2 tablespoons sugar
- 2 garlic cloves, minced
- 1 teaspoon fresh ginger, minced
- 1⁄2 teaspoon ground turmeric
- 2 tablespoons lime juice
- 1 1⁄2 lbs chicken breasts, cut into strips
- 1⁄2 cup frozen peas (optional)
- 1⁄2 cup green beans (optional)
- 1⁄2 cup red bell pepper (optional)
- 2 tablespoons fresh cilantro, minced
Directions
- Mix the coconut milk and curry paste with a whisk.
- add everything in the crock pot except for peas and cilantro.
- Cook low 6 to 8 hours or high 3 to 4 hours.
- Add cilantro and peas at the last 15 minutes.
- REMOVE LEMON GRASS.
