Thai Green Curry Chicken

Ingredients
- 1 (14 ounce) can coconut milk
- 1⁄2-1 tablespoon green curry paste
- 2 boneless skinless chicken breasts
- 1 -2 tablespoon Thai fish sauce
- 2 tablespoons brown sugar
- 1⁄2 cup frozen peas
- 1⁄3 cup chicken stock
Directions
- Cut chicken into bite size pieces.
- In a large saucepan, simmer coconut milk and curry paste over medium heat for 5 minutes.
- Add chicken, fish sauce, brown sugar, peas and chicken stock.
- Simmer 10 minutes, stirring occasionally.
- Note: start with a small amount of curry paste and increase gradually until desired spiced level.
