  1. Cut chicken into bite size pieces.
  2. In a large saucepan, simmer coconut milk and curry paste over medium heat for 5 minutes.
  3. Add chicken, fish sauce, brown sugar, peas and chicken stock.
  4. Simmer 10 minutes, stirring occasionally.
  5. Note: start with a small amount of curry paste and increase gradually until desired spiced level.
