Thai Cucumber Salad

Ingredients
- 1 cucumber, cut into ribbons with a peeler
- 1 gem lettuce, shredded
- 5 ounces bean sprouts
- 3 ounces cilantro, roughly chopped
- 3 ounces mint, roughly chopped
For the dressing
- 1 teaspoon rice vinegar
- 1⁄2 teaspoon light brown sugar
- 2 red chili peppers, deseeded and finely chopped
Directions
- Mix the dressing ingredients together, stirring until the sugar has dissolved.
- Place the salad ingredients in a bowl and pour over the dressing, mixing well to combine.
- Serve immediately.
