Thai Chicken Salad

Ingredients
- 1⁄3 cup peanut butter
- 2 tablespoons corn syrup
- 1 tablespoon soy sauce
- 1 tablespoon cider vinegar
- 1 teaspoon ginger, freshly grated or 1⁄2 teaspoon ground ginger
- 1 garlic clove, minced
- 1⁄4 teaspoon crushed red pepper flakes
- 1 1⁄2 cups chicken breasts, cooked and cubed
- 2 small red peppers, diced
- 1⁄3 cup green onion, chopped
- pita bread
- chopped lettuce
Directions
- In a microwavable bowl, combine first 8 ingredients.
- Microwave on high for 1 minute.
- Mix sauce with chicken, peppers, and onions.
- Serve chicken salad in pita bread or tortillas with lettuce.
