Thai Chicken Burgers

Ingredients
- 1 lb skinless chicken breast
- 1 red chili pepper, seeds removed and chopped
- 1 teaspoon Thai curry paste
- 1 ounce cilantro, roughly chopped
- 1 shallot, chopped
- 1 garlic clove, crushed
- 1⁄2 teaspoon gingerroot, finely chopped
- 1 lime, juice of, only
- 3 tablespoons olive oil, for frying
- salt and pepper
Directions
- Dice the chicken meat and place in a food processor with the other ingredients. Blitz until well combined.
- Using wet hands, shape the meat into even-sized burgers.
- Heat the oil in a non-stick frying pan and fry the burgers for 4 minutes on each side, until golden and cooked through.
