Thai Cantaloupe Soup

This is so yummy! Most cantaloupe soups are served cold. Don't be alarmed by this being served hot, It is out of this world! Just came up with it out of the necessity to use up an aging piece of fruit, plans for a Thai meal and a chilly October night--enjoy! Show more

Directions

  1. Half cantalope, discard seeds, scoop out flesh and set aside.
  2. Reserve shells to use for "bowls".
  3. Heat oil in a saucepan.
  4. Add onion.
  5. Sauté 2 minutes.
  6. Add cantaloupe flesh and tomatoes.
  7. Cook 5 minutes.
  8. Add the next 5 ingredients.
  9. Bring to a boil.
  10. Reduce.
  11. Simmer 5 minutes.
  12. Purée in batches.
  13. Return to pot.
  14. Re-heat.
  15. Ladle into shells.
  16. Top with the last 3.
  17. YUM!
