TGIF Jasmine Rice Pilaf

Ingredients
- 2 cups jasmine rice (rinsed until water is clear)
- 2 tablespoons unsalted butter
- 2 cups low sodium chicken broth
- 1⁄4 cup water
- 1⁄4 cup red pepper, diced
- 1⁄4 cup green pepper, diced
- 1⁄4 cup red onion, diced
- 1 teaspoon cumin
- 1 teaspoon cayenne
- 1 teaspoon black pepper
- 1 tablespoon dried parsley
Directions
- In a medium skillet heat butter until melted.
- Add peppers and onion sautee until soft. (About 5 minutred).
- Add garlic and sautee for 1 minute.
- Add rinsed jasmine rice and cook in butter mixture until crackling (about 3 minutes).
- Add broth and water, turn heat too high, bring to a boil. Turn heat to low. Add cumin, cayenne and pepper,.
- Stir all ingredients and cover with a tight lid. Let simmer for 15 minutes. Remove cover and add parsley, stir and recover. Remove from heat and let sit (covered) for 5 minutes. Fluff and serve.
