Texas Two-Step Ranch Dressing Cole Slaw

I am not big on coleslaw, but found this one to be a nice twist. Found in simple and delicious.

• Serves: 8

Ingredients

• 3  cups  coleslaw mix
• 1⁄4 cup  mexicorn, drained
• 1  jalapeno pepper, seeded and chopped
• 2  tablespoons  chopped red onions
• 1  tablespoon  minced fresh cilantro
• 1⁄2 cup  shredded cheddar cheese
• 1⁄2 cup  ranch salad dressing
• 1 1⁄2 teaspoons lime juice
• 1⁄2 teaspoon ground cumin

Directions

1. In a large bowl, combine the first six ingredients.
2. In a small bowl, combine the salad dressing, lime juice and cumin.
3. Pour over the coleslaw and toss to coat.
4. Refrigerate until serving.
