Texas Chewy Pralines

This is a chewy pecan praline that is quite similar to those made by Lamme's Candies in Austin, Tx.

  1. Line 2 baking sheets with aluminum foil.
  2. Coat with nonstick cooking spray.
  3. (I have found that using Release aluminum foil works better).
  4. In a large saucepan over medium heat, combine sugars and corn syrup.
  5. Heat to 250 degrees F (120 degrees C).
  6. Remove from heat, and stir in butter until melted.
  7. Gradually stir in cream.
  8. Return to heat.
  9. Cook, stirring constantly, until temperature reaches 242 degrees F (116 degrees C).
  10. Remove from heat, and stir in vanilla and pecans.
  11. Drop by spoonful onto prepared pans.
  12. Cool completely, then wrap each piece individually with plastic.
