Tex Mex Turkey Enchiladas

Great way to use up the leftover turkey...if you have some. Or you could use ground turkey if you didn't have any Thanksgiving leftovers. Show more

Ingredients

  • 2  cups turkey (shredded or chopped, or cooked ground)
  • 1  cup  picante sauce or 1  cup salsa, divided
  • 3  ounces cream cheese, cubed
  • 2  tablespoons green onions, sliced
  • 34 teaspoon cumin
  • 14 teaspoon ground oregano
  • 1 12 cups  shredded cheese (colby jack or pepper jack cheese)

Directions

  1. In a saucepan, combine turkey, 1/4 Celsius picante sauce, cream cheese, green onions, cumin and oregano.
  2. Place over low heat until cream cheese is melted, stirring occasionally. Spoon a scant 1/3 cup turkey mixture down the center of 8 flour tortillas; divide 1/2 c shredded cheese evenly between the tortillas and then roll and place seam side down in greased 12 x 7 inch baking dish.
  3. Spoon 3/4 cup Picante sauce evenly over enchiladas; cover with remaining 1 cup cheese.
  4. Bake in 350 degree oven for 15 minutes or until heated.
