Tex-Mex Spanish Rice

Ingredients
- 1 cup rice
- 1⁄4 cup oil
- 1 tomatoes, quartered
- 1 onion, quartered
- 1 garlic clove
- 1 jalapeno, minced
- 2 cups chicken broth
Directions
- Place tomato, onion, and garlic in food processor. Puree.
- Saute rice in oil until opaque.
- Add pureed mixture and remaining ingredients.
- Cover and simmer for 25 minutes WITHOUT removing lid.
