Teriyaki Pork Tenderloin

Ingredients
Teriyaki Sauce
- 1⁄4 cup low sodium soy sauce
- 2 tablespoons firmly packed dark brown sugar
- 2 tablespoons dry sherry
- 2 tablespoons rice vinegar
- 2 garlic cloves, minced
- 1 teaspoon finely grated fresh ginger
- 1⁄4 teaspoon red pepper flakes
Meat
- 1 1⁄4 lbs pork tenderloin, trimmed of all visible fat and silverskin
Directions
- The sauce: combine all sauce ingredients in a small bowl, stirring until the sugar dissolves.
- Put the teriyaki sauce and pork in a sealable plastic bag.
- Seal the bag and marinate the pork in the refrigerator, turning once, for at least 30 minutes to 4 hours.
- Preheat the broiler.
- Remove the pork from the marinade and discard the marinade.
- Place the pork on a roasting pan and broil until an instant-read meat thermometer inserted into the thickest part reads 155°, about 15 minutes, turning once.
- Let rest for 10 minutes before slicing.
