Teriyaki Chicken

Ingredients
- 2 tablespoons cornstarch
- 2 tablespoons cold water
- 1 cup white sugar
- 1 cup soy sauce
- 1⁄2 cup vinegar (white or cider)
- 1 minced garlic clove
- 1 teaspoon ground ginger
- 1⁄2 teaspoon black pepper
- 1 1⁄2 lbs chicken breasts
Directions
- Cut up garlic and ginger.
- In the pot, stir together everything except the chicken.
- Preheat oven to 375 degrees.
- Simmer the mixture on 3-4/10 for 10-15 minutes or until it has thickened.
- While the sauce simmers, line the casserole dish with aluminum foil and wash the chicken, placing it into the lined casserole dish, then take a fork and poke holes in each side of the chicken in a few places.
- Once the sauce has thickened, cover the chicken with the sauce, then cover the casserole dish with aluminum foil.
- Cook for 20 minutes covered, then uncover, turn over the chicken, and cook another 20 minutes.
