Tasty Thai Prawns

Ingredients
- 1 tablespoon oil
- 2 garlic cloves, crushed
- 1 teaspoon lemongrass, finely chopped
- 1 teaspoon ginger, finely chopped
- 500 g prawns, cleaned
- 2 teaspoons honey
- 1⁄2 cup chopped spring onion
- 1 lemon, juice of
- 415 g tomato puree
- 1 cup coconut milk
- 2 tablespoons coriander, chopped
Directions
- Heat oil in saucepan.
- Add garlic, lemon grass, ginger and spring onions and cook until soft.
- Add prawns and cook 2 minutes.
- Add honey, lemon juice and tomato puree. Simmer 5 minutes.
- Add coconut milk and coriander.
- Serve over prepared rice.
