Tasty Tapenade

Ingredients
- 300 g pitted black olives
- 6 anchovy fillets
- 4 tablespoons capers
- 1 garlic clove, chopped
- 100 ml olive oil
- 1 tablespoon lemon juice
- 2 teaspoons Dijon mustard
- 2 teaspoons tomato puree
- 1 teaspoon chopped fresh thyme
- 1 tablespoon of fresh flat leaf parsley
- salt and pepper
Directions
- Place all the ingredients in a food processor and blend into a coarse paste. Taste and season with salt and pepper as required. Store in refrigerator.
