Tasty Pumpkin Bread (Lightened Version)

Ingredients
- 2 eggs
- 4 egg whites
- 2 cups canned pumpkin
- 1 cup unsweetened applesauce
- 2⁄3 cup cold water
- 3 cups all-purpose flour
- 1 cup whole wheat flour
- 1⁄2 cup flax seed
- 1 tablespoon baking soda
- 2 teaspoons cinnamon
- 1 teaspoon nutmeg
- 2 cups Splenda brown sugar blend
- 1 1⁄2 teaspoons salt
Directions
- Preheat oven to 350.
- Mix first five ingredients (wet) in a large bowl and set aside. Sift and mix remaining ingredients (dry) in another bowl.
- Gently add the dry ingredients into the wet in four or five segments. Mix until combined but do not overmix.
- Line two large loaf pans with parchment. Divide batter evenly.
- Bake at 350 for 1 hour.
