Tarragon Salad Dressing

I've always loved the flavor of tarragon, and I was thrilled to find this recipe in the current issue of "Taste of Home."

• Yields: 3/4 cup

Ingredients

• 1⁄2 cup olive oil or 1⁄2 cup  vegetable oil
• 1⁄3 cup red wine vinegar or 1⁄3 cup cider vinegar
• 2  tablespoons  minced fresh tarragon or 2  teaspoons dried tarragon
• 1  teaspoon Dijon mustard
• 1  clove garlic, minced
• 1⁄2 teaspoon salt
• 1⁄2 teaspoon pepper
• 1⁄2 teaspoon  minced chives
• 1⁄2 teaspoon  minced fresh parsley
•  salad greens

Directions

1. In a jar with a tight fitting lid, combine the first nine ingredients; shake well.
2. Serve over salad greens.
