Tarragon Chicken With Linguine

Ingredients
- 1 lb chicken breast, boneless and skinless
- 6 ounces linguini noodles
- 1 cup chicken stock
- 8 mushrooms, sliced
- 2 carrots, julienned
- 1 onion, thinly sliced
- 1⁄4 cup fresh parsley, minced
- 1⁄2 teaspoon dried tarragon
Directions
- Cut the chicken into bite sized strips. Set aside.
- Cook the pasta according to package directions. Drain and set aside.
- In a large frying pan over medium heat, bring the stock to a simmer.
- Add the chicken and cook for 7 minutes, stirring frequently.
- Add the mushrooms, carrots, onions, parsley and tarragon. Cook until the chicken is tender, about 5 minutes.
- Add the linguini to the pan.
- Toss to combine. Heat until everything is heated through.
