Tarragon Chicken Dijon on Sprouted Wheat Bread

Ingredients
- 2 teaspoons low fat cottage cheese
- 1 teaspoon Dijon mustard
- 1⁄2 teaspoon tarragon
- 1 slice sprouted wheat bread
- 2 slices cooked chicken (2 oz)
- salt and pepper
- 4 pieces red bell peppers, thin strips
Directions
- In a small bowl, blend together cottage cheese, mustard and tarragon. Spread over bread.
- Top with chicken and season lightly with salt and pepper. Garnish with red pepper strips.
