Tapioca Pudding (using Minute Tapioca)

Ingredients
- 1⁄3 cup sugar
- 3 tablespoons minute tapioca
- 2 3⁄4 cups milk
- 1 egg, beaten
- 1 teaspoon vanilla extract
Directions
- Mix sugar, tapioca, milk and egg in a saucepan, let set 5 minutes.
- Cook on medium heat, stirring constantly, til mixture comes to a full boil.
- Remove from heat, then stir in vanilla.
- Cool 20 minutes, then stir.
- Serve warm or cold.
