Tangy Apple and Almond Salad

Ingredients
- 3 large apples
- 1⁄2 cup fresh parsley
- 1⁄2 cup almonds
- 2 tablespoons white wine vinegar or 2 tablespoons rice wine vinegar
- 2 tablespoons olive oil
- 1 lemon
- 1⁄4 cup brioche breadcrumbs (optional)
Directions
- Chop almonds
- Roast almonds gently in a heavy bottom fry pan on medium heat until golden brown.
- Thinly slice the apples.
- Sprinkle with lemon juice as the apple slices are added to the bowl and stir gently.
- Chop parsley very finely and add to apples.
- Drizzle vinegar and olive oil over the top and stir again.
- Finish by sprinkling almonds and breadcrumbs on top.
- Stir before serving.
