Tangerine Salmon Salad

Ingredients
Dressing
- 6 tablespoons tangerine juice
- 1⁄4 cup olive oil
- 1 small garlic clove, minced
- 1 teaspoon Dijon mustard
- 1⁄2 teaspoon finely grated tangerine zest
- 1⁄4 teaspoon salt
- 1⁄8 teaspoon pepper
Salad
- 4 cups mixed baby greens
- 1 (7 ounce) can salmon, drained and broken up
- 2 green onions, thinly sliced
Directions
- Dressing: whisk together the tangerine juice, oil, garlic, mustard, zest, salt and pepper.
- Salad: arrange greens on serving plates. Scatter salmon over top. Drizzle with dressing and sprinkle with onions.
