Taco Supreme Cupcakes

Yields: 24 cupcakes
Ingredients
- 1⁄2 lb ground beef
- 1 (16 ounce) can refried beans
- 1 (1 ounce) package taco seasoning
- 1⁄4 cup chopped cilantro
- 48 wonton wrappers
- 3 cups shredded monterey jack cheese
Toppings
- sour cream
- minced red onions or sliced green onion
- minced red bell pepper
- chopped jalapeno pepper
Directions
- Preheat over to 350 degrees.
- In skillet, cook beef until browned. Add beans, taco seasoning, cilantro and 2/3 cup water. Let simmer 5 minute.
- Place 24 wrappers in 2 greased (12-wells each) muffin pans; coat with cooking spray. Spoon 1/2 beef mixture and 1/2 cheese into wells.
- Repeat layering with remaining wrappers, beef mixture and cheese. Bake in preheated oven for about 15 minutes. Serve with toppings as desired.
