Taco Soup

Serves: 6-8
Ingredients
- 1 lb extra lean ground beef (such as Soy Crumbles) or 1 lb vegetarian beef substitute (such as Soy Crumbles)
- 1 medium onion, chopped (optional)
- 1 (15 ounce) can pinto beans
- 1 (15 ounce) can black beans
- 2 (15 ounce) cans tomatoes and green chilies
- 1 (4 ounce) can green chilies, chopped
- 1 (3 ounce) package taco seasoning mix
- 1 (3 ounce) package hidden valley ranch dressing mix
- 1 (15 ounce) can whole kernel corn
Directions
- Brown the ground meat and add onions. Cook till tender. Drain any fat.
- Add the Taco seasoning to the meat mixture and stir to combine.
- Now open those cans and add entire contents of all the canned items and the ranch dressing mix and stir to combine all ingredients.
- If it seems a little thick, add about a can of water and simmer for about 15-20 minutes (you can cook it longer if you like but it just needs to be heated through).
