Taco Bake

great way to use leftover fajita tortillas - this makes 2 pies

Yields: 8 pieces

Ingredients

  • 1  lb hamburger or 1  lb ground beef
  • 1 (1 1/4ounce) package  taco seasoning
  • 8  extra fluffy  fajita-size flour tortillas (I use mission brand)
  • 0.5 (16 ounce) jar  medium  salsa con queso (newman's own)
  •  shredded cheese (any type you would like)
  •  green onion
  •  cilantro

Directions

  1. Cook your ground beef until no longer pink. Drain off fat. Add taco season and prepare as on package.
  2. spray 2 round pie pans with Pam.
  3. Take one tortilla and 1 tablespoon of the salsa con queso, spread queso on tortilla. Next layer on a thin coat of the taco meat. Then sprinkle with shredded cheese. Repeat with 2 more layers, for a total of 3 meat layers. The fourth and final tortilla will not have the meat on it, only salsa con queso and shredded cheese.
  4. Repeat in next pie pan.
  5. Bake at 350 for about 10/15 mins until cheese on top layer is melted. Cut each taco bake with a pizza pie cutter into 4 pieces.
  6. Garnish with cut green onion and cilantro.
