Tabouli Bouli Couscous Salad

Ingredients
- 2 bunches fresh Italian parsley, finely chopped
- 1 small red onion, finely chopped
- 10 cherry tomatoes, chopped in 1/2
- 3 lemons, juice of (Freshly Squeeze)
- 5 tablespoons olive oil (optional)
- 1 cup couscous
- 1 1⁄2 cups chicken or 1 1⁄2 cups vegetable stock
- 1 garlic clove, crushed (more or less to taste)
Directions
- Boil stock add couscous take off heat and cover set aside to cool.
- Put everything in a bowl and add cooked couscous once cooled.
- Eat and/or refrigerate. (I think its better next day).
