Tabbouleh

Ingredients
- 6 ounces cracked wheat (bulghar wheat)
- salt & freshly ground black pepper
- 2 lemons, juice
- 2 tablespoons extra virgin olive oil
- 3 ounces flat leaf parsley, chopped
- 1 ounce mint leaf, chopped
- 4 scallions, finely sliced
- 3 roma tomatoes, quartered
Directions
- Soak the cracked wheat in cold water for 20 mins, drain and squeeze dry.
- Put the wheat in a glass bowl and season with salt and pepper.
- Add the lemon juice and olive oil.
- Allow to rest for 30 minutes.
- Add the parsley, mint and scallions.
- Check the seasoning and top the salad with the tomato quarters.
