Swiss Cheese Balls

Wonderful little appetizers from a friend at work. Prep time includes cooling time.

Ready In: 2 hrs 30 mins

Yields: 30 appetizers

Ingredients

  • 14 cup butter
  • 2  tablespoons flour, plus additional flour for rolling balls
  • 12 cup  hot milk
  • 12 lb swiss cheese, grated
  •  salt and pepper
  •  nutmeg
  • 2  egg yolks
  •  oil (for deep frying)

Directions

  1. Preheat oven to 300 degrees.
  2. In a sauce over medium heat, melt the butter.
  3. Stir in the 2 T flour.
  4. Add milk and stir to mix well.
  5. Add the Swiss cheese and seasonings to taste.
  6. Stir so all ingredients are well combined.
  7. Add the egg yolks and remove from the heat.
  8. Pour mixture in a 9x9" baking dish.
  9. Bake in the preheated 300 degree oven for 10 minutes.
  10. Remove the dish from the oven and refrigerate for 2 hours or until completely cooled.
  11. Heat oil in a deep fryer.
  12. Form balls and roll in the additional flour.
  13. Deep fry the cheese balls, a few at a time, until golden brown.
  14. Remove from hot oil and drain.
