Sweet Sue Hot Chicken Salad

This was given to me by my mother-in-law. It was from a magazine using Sweet Sue Chicken

• Serves: 6
• Yields: 6 each

Ingredients

• 2 (7 ounce) envelopes  premium chunk chicken, Sweet Sue
• 1 1⁄2 cups celery, chopped
• 1⁄3 cup mayonnaise
• 1  tablespoon lemon juice
• 1 (10 1/2ounce) can  cream of chicken soup
• 1⁄4 cup onion, chopped
• 1⁄4 cup pimiento, drained and chopped
• 2  hard-boiled eggs, chopped
• 1⁄3 cup  slivered almonds (2 oz pkg) or 1⁄3 cup water chestnut

• Topping

• 1 3⁄4 cups  potato chips
• 3⁄4 cup cheddar cheese, grated
•  butter

Directions

1. Mix ingredients and place in casserole dish. Mix topping ingredients and place on top of Sweet Sue Chicken mixture. Place small pats of butter or margarine on top of casserole.
2. Bake at 350 for 25 minutes.
