Sweet & Spicy Watercress Tofu

Ingredients
- 500 g watercress
- 330 g firm tofu (mashed)
- 1 medium onion (chopped)
- 5 garlic cloves (minced)
- 1 piece gingerroot (minced)
- 2 tablespoons honey
- 100 g walnuts
- 2 tablespoons sesame
- 1⁄2 teaspoon red chili pepper flakes
- salt
- pepper
- sesame oil, to fry
Directions
- Fry onions, garlic and ginger.
- Add sesame and walnuts and red chili.
- Place washed whole watercress; let steam.
- When wilted add the tofu.
- Season with salt and pepper.
- Just before removing from heat add honey (to make this recipe vegan, use honey substitute).
