Sweet & Sour Salad Marinade

Cool & crispy, with a tang! A quick and easy (not to mention delicious) marinade for cucumbers, tomatoes, and green peppers... and great for having on hand to put out of the frig for a meal. If you only use the marinade for cucumbers (it helps the "after-taste" thing), you can just cut up more into the marinade for a 2nd batch! I love this in the summer with a sandwich or by itself! Yields: 3 cups marinade

Ingredients

  • 1  cup white vinegar
  • 10  saccharin tablets, 1/2 grain (or sweetener of your choice to equal)
  • 2  cups water

Directions

  1. In a bowl, dissolve sacchrine in vinegar; stir in water.
  2. Add peeled and sliced cucumbers, quartered tomatoes, and/or seeded green peppers cut into strips.
  3. Cover and chill.
