Sweet & Sour Chicken

Ingredients
- 1 onion, chopped
- 1 carrot, chopped
- 1 celery, chopped
- 1 green pepper, chopped
- 1 red pepper, chopped
- 1 lb boneless skinless chicken thighs, cut into bite pieces
- 1⁄2 cup kraft Catalina dressing
- 1⁄2 cup soy sauce
- 1⁄2 cup brown sugar
- 1 tablespoon grated ginger
- 8 ounces canned pineapple chunks, reserving juice
- MINUTE White Rice, cooked
Directions
- Place all vegetables in bottom of slow cooker reserving peppers. Top with chicken thighs.
- Add dressing, soy sauce and brown sugar with ginger and pineapple juice, reserving pineapple.
- Cover and cook on LOW for 7-8 hours or HIGH for 3 1/2-4 hours. During last 30 minutes of cooking, add pineapple and peppers. Serve over hot rice.
