Sweet Potatoes from the Carolinas

Ingredients
- 1 tablespoon olive oil
- 12 dry shallots, peeled
- 4 sweet potatoes, peeled and cubed
- 1 tablespoon fresh parsley, chopped
- salt and black pepper
Directions
- heat oil in saucepan over medium heat.
- add shallots and sweet potatoes.
- season well.
- cover and cook for 18 to 30 minutes, stirring 3 to 4 times.
- when vegetables are cooked sprinkle with parsley.
- serve.
- Note:the sweet potatoes will stick to the bottom of the saucepan if not stirred frequently.
