  1. In a large saucepan over medium heat, bring sweet potato and water to a boil. Reduce heat and boil gently until soft, about 5 minutes.
  2. Drain. Using a hand mixer, add butter and cinnamon and whip until smooth.
  3. Cover and refrigerate up to 3 days.
  4. Variation: before serving, drizzle the top with maple syrup.
