Sweet Potato Spread

Yields: 1 1/3 cups
Ingredients
- 2 cups diced sweet potatoes
- 3 cups water
- 1⁄4 cup unsalted butter, at room temperature and diced
- 1⁄8 teaspoon ground cinnamon
Directions
- In a large saucepan over medium heat, bring sweet potato and water to a boil. Reduce heat and boil gently until soft, about 5 minutes.
- Drain. Using a hand mixer, add butter and cinnamon and whip until smooth.
- Cover and refrigerate up to 3 days.
- Variation: before serving, drizzle the top with maple syrup.
