Sweet Potato Pie Cookies

A pie in a cookie!

Ingredients

• 1 1⁄4 cups flour
• 1  teaspoon ground nutmeg
• 1 1⁄2 teaspoons baking powder
• 1 1⁄2 teaspoons baking soda
• 1⁄2 teaspoon salt
• 1⁄2 cup butter
• 3⁄4 cup sugar substitute
• 1  egg
• 1 1⁄2 cups  peeled and finely grated sweet potatoes
• 2  teaspoons vanilla extract

Directions

1. In a mixing bowl, sift together the flour, nutmeg, baking powder, baking soda, and salt, and set aside.
2. Whisk together, with an electric mixer, the butter and sugar.
3. Add the egg, vanilla extract and sweet potato.
4. Fold the dry ingredients into butter-sugar mixture.
5. Drop spoonfuls of dough onto parchment-lined cookie sheet. Bake at 400 degrees for 12 to 15 minutes or until golden brown.
6. Transfer to a wire rack to cool.
