Sweet Potato Pie

Ingredients
- 6 large sweet potatoes, peeled
- 1⁄2 lb butter, room temperature
- 3 eggs, room temperature
- 1⁄2 cup condensed milk
- 1⁄2 cup evaporated milk
- 1 cup sugar
- 1 teaspoon nutmeg
- 1 teaspoon vanilla extract
- 1 teaspoon lemon extract
- 4 frozen pie crusts
Directions
- Place potatoes in water and boil for 20 minutes or until softened, drain water and place potatoes in kitchen-aid standing mixer.
- Add butter and mix on medium until all incorporated.
- Add eggs one at a time and mix until incorporated. Do not stop the mixer.
- Add remaining ingredients while mixer is still mixing. This will ensure that the "stringy" portion of the potato is broken up well.
- Poor into pie shells and place in oven on 350 degrees.
