Sweet Potato Pie

This is my grandmother's recipe for sweet potato pie.

  1. Place potatoes in water and boil for 20 minutes or until softened, drain water and place potatoes in kitchen-aid standing mixer.
  2. Add butter and mix on medium until all incorporated.
  3. Add eggs one at a time and mix until incorporated. Do not stop the mixer.
  4. Add remaining ingredients while mixer is still mixing. This will ensure that the "stringy" portion of the potato is broken up well.
  5. Poor into pie shells and place in oven on 350 degrees.
