Sweet Potato Pecan Muffins

  1. Heat oven to 400°F
  2. Spray muffin tin with spray.
  3. In medium bowl combine flour, sugar, baking powder, cinnamon, salt and nutmeg.
  4. In large bowl with mixer at medium speed, beat potatoes, corn syrup, oil, eggs and vanilla.
  5. Stir into flour mixture till well blended.
  6. Stir in nuts.
  7. Spoon into muffin cups.
  8. Bake 20 minutes till light brown and firm to touch.
  9. Cool in pan on wire rack 5 minutes, then remove.
